You will be amazed to find out how exquisite a salad can be made from the common carrots and radishes with this Thai inspired dressing! Simple as it is to prepare, the resulting flavors are topnotch!
Wash and peel the carrots, and then slice them julienne, i.e. into very thin strips. (You can also use a vegetable chopper to make the job easier.)
Wash the radishes, too, and slice them thinly.
Cut the spring onions into thin rings.
In a bowl, mix the fish sauce, the cherry vinegar, the hazelnut oil, the powdered sugar and some finely chopped chili.
Toss the sauce together with the carrots, the spring onions, the radishes and the coriander leaves, and let it chill and mature for 1-2 hours.
