This is an easy-to-prepare, nutritious potato dish recipe, where the main “spices” are the aromatic cold pressed oils. So here is the secret of a yummy stuffed potato dish – from just a few, quality ingredients.
Wash 4 medium sized potatoes and then bake them in their jacket in an oven at 200 °C for about 40-45 minutes.
When they are done, cut them in lengthwise like a boat. Sprinkle their insides with 1-1 teaspoonfuls of walnut oil and pepper them.
Slice the chorizo or some other dry (home-made) sausage into rings and roast it in an empty skillet.
Mix the ewe (or cow milk) cottage cheese together with the flaxseed oil, the apple balsamico, the pinch of salt and the chives.
Fill the still lukewarm potato boats with the spiced cottage cheese. Serve them with the roasted sausage and the chives.
If you use cottage cheese from cow milk, put it in a blender to make it creamy, adding some salt, too. If you use ewe cheese, you do not need to salt it. You can also mix the two kinds of cottage cheese, in which case you can add salt according to taste.
