You do not need to switch on the oven to make a delicious dessert. This poached pear recipe is a perfect choice for this, as it is very easy to make. Poaching means cooking something briefly, below boiling point. This hazelnut-flavored chocolate sauce is an excellent match to the pear.
In a smaller pot, bring the apple juice to a boil, together with the sugar, the cinnamon stick, the fresh rosemary sprig, a pinch of salt and two spoonfuls of apple balsamico.
Meanwhile, peel the pears whole, and then place them standing into the hot syrup. Reduce the heat and allow the pears to be steamed in the simmering liquid for about 10 minutes. Then let them cool until lukewarm in the syrup.
Break the chocolate into pieces and melt it, together with the cream. When it has cooled to cca 50 C, mix in the hazelnut oil, too.
Before serving, sprinkle the pears with some apple balsamico crema.
