Mexican salad with chia oil

This salad contains nothing but absolutely wholesome ingredients which you can consume also as a meat-free main course.  The chia and sesame oil dressing adds an exciting twist to the classic Mexican salad mix.

Production

Cut the cucumber in half lengthwise, and scrape out its wet core with a small spoon. Slice its firm flesh into half rings.

Cut the avocado in two, remove its seed, peel it and cut it into cubes.

Finely chop the purple onion and cut the cherry tomatoes in half.

Wash and drip the (canned) red beans.

Pour the juice of a small lime in a closeable jar. Add a pinch of salt, allowing the salt crystals to melt. Add the oils and the finely snipped chili. Close the jar and shake its content thoroughly.

Before serving, place the prepared ingredients in a mixing bowl, pour on the dressing and toss them thoroughly together with your hand. Serve it immediately, sprinkling it with fresh coriander leaves.
