When it comes to spinach, most people think of a vegetable dish but in fact, it is an excellent base ingredient for cold or lukewarm salads. This spinach salad is prepared with homemade ham and pine seeds, made even more exciting and wholesome by the tomato vinegar and the chia oil.
In a hot skillet, braise the crushed garlic on the rape seed oil.
Add the pine seeds and roast them until the seeds turn light brown.
Cut the traditionally cured ham, first into thin slices and then into cubes, and then place them on the garlicky pine seeds. Roast it for 5 more minutes.
Add the washed spinach leaves in 1 or 2 portions to the ham. It is done when the spinach leaves collapse a little. Finally, season it with 1-2 teaspoons of tomato vinegar.
Before serving, mix in the chia oil and serve it with some grated parmesan cheese.
