Tofu is a substantial, nourishing source of vegetable protein, which we can prepare in numerous versatile ways in place of meat. Cut in cubes and roasted, it is an excellent accompaniment to fresh lettuces.
Cut the tofu into cubes of 1×1 cm and place them in a bowl. Mix the soy sauce with the pear vinegar and 1 tablespoon of rape seed oil. Add pepper and then pour the sauce on the tofu cubes. Let it marinate for 10 minutes.
Place the lettuce mix in a bowl and pour on the marinating juice of the tofu. Heat the remaining rape seed oil at medium heat in a skillet and sear the spring onions sliced into thin rings until they turn glassy.
Finally, add the tofu cubes and roast them until they turn golden brown.
Mix the tofu and the onions with the lettuce mix and toss them together with some pine seed oil.
Decorate your tofu dish with parmesan flakes.
