Eggs are a major source of protein for us, and there is great variety in how we can prepare them. Hard boiled eggs, for instance, make a marvelous sandwich cream with some extra ingredients, whether eaten for breakfast or spread on party food snacks.
Place the eggs in a pot and pour on as much water as would cover them. Boil the eggs for 10 minutes after the water has come to a boiling point and then place them in cold water to have them cooled.
Peel the hard boiled eggs and cut them in half. Put aside 3 boiled and halved egg whites and place all the other ingredients (except the green spices) in a bowl and blend them in a mixer.
Finally, add the finely chopped egg whites, the thyme and the chopped chives to the cream. Let it rest in the fridge for about an hour before consumption.
Stored in the fridge in a closed box, the spread can be consumed for 2-3 days.
