Prepare this cheese and apple salad with an exquisite pumpkin seed oil- yoghurt dressing, which makes it not only healthy but absolutely unique in flavor.
Wash the apples and cut them into cubes, leaving on their skin.
Cut the cheese into pieces of about the same size as the apples.
Put the apple balsamic vinegar in a closeable jar and add a pinch of salt, allowing the salt crystals to get melted. Add the pumpkinseed oil, the mustard and the powdered sugar. Close the jar and shake its content thoroughly.
Prepare the dressing with the plain yoghurt.
Toss the yoghurt dressing together with the apple-cheese mix.
Line a bowl with the lettuce leaves and place the apple-cheese – dressing mix on it. Sprinkle it with roasted sunflower seeds.
